In East India the combination of rice with meat and vegetables is called pilau, in the US, it’s pilaf, and in the Caribbean, where we found this version we love so much, it’s known as rice pelau. Influenced by ingredients brought to Trinidad by East Indian immigrants, this delicious dish is made with chickpeas, turmeric, chili flakes, coconut milk, and currants.

For the best flavor and easiest preparation, rice pelau is traditionally prepared as a one-pan meal, cooked along with pieces of fresh fish, chicken or shrimp. Excellent when finished with a squeeze of lime juice and chopped cilantro.
