The hint of scotch bonnet chili in this popular Jamaican rice dish provides delicious contrast to the sweet coconut milk and creates a perfect balance of flavors. Excellent as a simple dinner, or gently toss sautéed shrimp or tofu into the prepared rice and beans for a more substantial meal. Also excellent as a side dish with grilled fish, chicken, or beef.
